Hazelnut brittle

Hazelnuts are true taste heroes. Their strong, nutty aroma makes them a popular ingredient in our mueslis. The best hazelnuts grow in the Mediterranean countries, where they are carefully processed after harvest. First the sepals are removed, then the nuts dry and are sorted by size. To get to the aromatic seeds, the shells are removed with millstones - gently and effectively.

DIY: Make your own hazelnut brittle

Want to make your own brittle? No problem! This is how it works:

Carefully roast 100 g hazelnuts in a pan without fat, then leave to cool. Caramelise 100 g sugar in the pan. Stir in the roasted nuts and spread the mixture onto baking paper. Leave to harden, then break into small pieces or chop finely. Perfect as a topping for muesli, desserts or pastries.
