Preparation

1Wash and clean the zucchini and cut it into long strips using a spiral cutter. Bring a pot of salted water to the boil.

2Meanwhile, peel the carrot and ginger and grate them finely with a vegetable slicer. Bring both to the boil in the vegetable broth together with the Kölln muesli. Remove from the heat and let it simmer briefly, covered. Then mix with the almond butter. Season with salt, pepper and nutmeg.

3For even more carrot flavor, replace half of the zucchini with carrots.

4Add the zucchini to the boiling water for 2-3 minutes and rinse. Drape the zoodles with the sauce on a plate and garnish with fresh parsley. Preparation time: approx. 25 minutes
